- Add Wet Ingredients: Beat in the vanilla extract, the cold whole egg, and the cold egg yolk until the mixture turns pale, light, and creamy.
- Fold in Dry Ingredients: Gently stir in the plain flour and bicarbonate of soda until just combined. Take care not to overmix the dough once the flour is added.
- Add the Chocolate: Fold in the milk chocolate chips using a spatula or wooden spoon until evenly distributed.
- Scoop & Space: Use a 60ml (¼ cup) round ice-cream scoop or American quarter-cup measure to scoop round balls of dough onto your prepared baking sheet. Leave roughly 8cm (3 inches) of space between each cookie to allow room for spreading. (Note: Bake in two separate batches, keeping the remaining dough in the fridge while the first batch bakes).
- Bake: Bake in the preheated oven for 15–17 minutes, or until the edges are lightly golden and set, while the centers remain soft.
- Cool: Allow the cookies to cool on the warm baking sheet for 5 minutes to set before carefully transferring them to a wire rack to cool completely.
